We’re headed into Disneyland to make a recreation of the popular Matterhorn Macaroons from Jolly Holiday. I made countless batches of macaroons to get the recipe just right and I’m so excited to finally share this recipe with you. Grab your lederhosen because we’re about to head to the Matterhorn—macaroon, that is!

Magical Mountain
The Matterhorn has a longstanding history at Disneyland. The attraction will be turning 62 on June 14 this year! It was the very first rollercoaster ride at Disneyland and the first tubular steel rollercoaster in the world! After all these years, the iconic Matterhorn remains a family favorite ride, even if it is a bit on the rough side. I’m sure that if you gave the yeti a Matterhorn Macaroon, he’d lighten up for sure!
With two routes to choose from, the Matterhorn adventure always feels fresh, no matter how many times you’ve ridden it. This is always a must-do whenever my family visits Disneyland.
And while I absolutely adore the ride, there’s something special about the Macaroon version at the Jolly Holiday. One of my Disneyland traditions is to swing by Jolly Holiday and pick up a Matterhorn Macaroon.

Although it’s tempting to eat it in the park, I like to take it home with the sole purpose of enjoying it the morning after my Disneyland day. It’s an opportunity to reflect on the memories of being at Disneyland, plus it’s a delicious way to start the day. Without further ado, let’s make some Macaroons!
Copycat Jolly Holiday Matterhorn Macaroons
Ingredients
- 1 cup sugar (I used ultrafine)
- 3 c. shredded unsweetened coconut (I used Bob’s Red Mill which is more finely shredded and closer to the one at Disneyland)
- ¼ t. salt
- 1/3 cup flour
- 1 t. vanilla
- 3 large egg whites
- 1 package Bright White chocolate melting wafers
- Clear sanding sugar
Instructions:
- Preheat oven to 300 degrees F. Mix all ingredients in a bowl until all is incorporated.

- I used a large cookie scoop (about 1/3 cup) to scoop on a parchment lined cookie sheet, wet your hands and gently form into a Matterhorn shape. Make sure you have a wide base and a not so skinny top or it will burn.
- Bake for 21-25 minutes until slightly golden brown. Let cool on cookie sheet and then transfer to cooling rack to cool completely.

- Melt the chocolate in the microwave at 50% power or in a double boiler. Dip the fully cooled Matterhorn into the melted chocolate, gently shake off excess and sprinkle with sanding sugar. Let chocolate firm up at room temp on cooling rack.



These make for great gifts, especially for a fellow Disneyland fan. I packaged up a couple of these delicious mountains with a special decorative box with the Matterhorn attraction poster. I hope that these make it to a good home!
