I love celebrating minor holidays with the family and it’s even better when I can incorporate Disney into it! Today, February 27th, is National Strawberry Day, and I’ve got a whopper of a magical Disney treat for you!

While my hobby is photography and writing about Disney, my wife Theresa’s hobby is figuring out travel deals and getting us to fun destinations. It’s a pretty good match. Back in 2018 and 2019, our family of four, plus our good friends Ruston and Jacob, visited every single Disney Park in the World! That’s going to be a story for another time, but it helped me pull together a special article for you today that I hope you find berry fun (see what I did there?). 

When I saw that National Strawberry Day was coming up, it got me to thinking, I’ve tried a whole bunch of different strawberry treats when I’ve been to Disneyland. I wonder… Have I tried a Strawberry Treat from every Disney Resort in the world?

Going through my massive archive of photos from all our travels, I think we have! This is just a small sampling of the many things we’ve tried, but some of our favorites have been:

Hong Kong Disneyland – Strawberry Frozen Treats

One thing we ate a lot of at the Hong Kong Disney Resort was Frozen Pops. Everyone is familiar with the Chocolate Mickey Bar, but did you know there’s also a Minnie Bar? Made with Strawberry Ice Cream, a vanilla bow and coated on the back with chocolate, the Minnie Bar is pretty adorable. There’s also a Lots-o’-Huggin’ Bear Sherbet Frozen Treat that is strawberry flavored (naturally). 

I’m going to make it my own today and make a Strawberry Sorbet to do double duty and make both frozen treats!

This homemade Strawberry Sorbet is super simple to make. 

Ingredients:

    • 1 whole lemon (seeded)
    • 2 cups of sugar
    • Juice of 1 additional lemon
    • 2 cups of strawberries with the tops cut off, frozen

Living in Southern California we’re fortunate to have a lemon tree in our yard that keeps us stocked up with fresh lemons year round.

I love to make kitchen time family time. The kids love to help out in the kitchen, and I love that they love to do it. 

In a food processor, add 1 whole lemon, yes the peel, pith, and all, and blend with the sugar. After fully blended, pour into a bowl.

Add 2 cups of frozen strawberries plus the lemon juice to the food processor and blend it to a puree. 

Add lemon and sugar mixture and continue mixing until finely blended.

It wasn’t quite as pulverized as I liked, so I used my powerful Vitamix blender to completely destroy any of the chunks. It also had the added benefit of whipping some air into the mixture. That went into an 8″x8″ glass dish lined with parchment paper to freeze overnight.

The next day it was time to cut out my shapes. These Mickey Mouse sandwich cutters are super versatile to making any project a little more Disney-like. The Lotso Frozen Pop has a strawberry outer edge with an internal vanilla ice cream. Using one of my smaller cookie cutters I took out a small circle from the center and filled it with vanilla! I’m turning these Lotso pops into Mickey pops!

Using the same Mickey cookie cutters, I made additional Minnie Mouse blanks. Then I used a Bow Cookie cutter to take out a section of the strawberry sorbet.

Then using that same method, cut out a piece of vanilla ice cream to fill it!

All this brings back fun memories. Like Ian eating his Lotso treat while being on Ruston’s shoulders. Yikes! I hope it didn’t drip too much!

Making anything chocolate dipped at home is ridiculously simple. You don’t need fancy melting chocolates from the store. My family regularly makes chocolate covered strawberries or other treats, and all you need is chocolate chips and shortening. 

Ingredients:

    • 1/2 cup of semi-sweet chocolate chips
    • 1.5 tsp of shortening

Place chips in microwave safe bowl, break the shortening into bits and sprinkle throughout the chocolate. Microwave on High in 30 second increments until it’s all melted. (mine took 90 seconds).

From there, you’re good to dip or spread onto your treats! I made sure the Minnie Pops were hard frozen because the warm chocolate is going to cause it to start melting! As soon as they were dipped, they went back into the freezer to harden again.

For being made at home, I think they looked great, but they tasted even better! Theresa said that this was the best strawberry sorbet that she has ever tasted.

Shanghai Disneyland Resort – Mickey Strawberry Napoleon with Powdered Sugar and a Chocolate Mickey Stencil

At Shanghai Disneyland there’s a fantastic pastry shop called Remy’s Patisserie on Main Street that has cases and cases filled with delicious treats. My crew stopped there multiple times during our visit to that park. One of the amazing treats was a Mickey Napoleon with fresh strawberries and a vanilla cream. 

To start, I needed to make the Vanilla Pastry Cream for my Napoleons. 

Vanilla Pastry Cream ingredients:

    • 1 whole egg
    • 2 egg yolks
    • 1/2 cup of sugar
    • 1/4 corn starch
    • 1 tsp of salt
    • 2 cups of whole milk
    • 1 tsp of vanilla extract
    • 4 Tbsp butter, cubed

Whisk together 1 whole egg, 2 egg yolks, 1/2 cup of sugar, 1/4 corn starch, 1 tsp of salt until it is fluffy and creamy. 

Separately in a saucepan, bring 2 cups of whole milk to a boil. 

I spooned a couple tablespoons of hot milk into my egg mixture, while whisking it, to temper it and slowly bring the temperature of the eggs up without scrambling them. I continued adding hot milk to the eggs in small increments, until it was all combined. That went into a saucepan for 4 minutes to cook.

After letting it cool slightly, I added 1 tsp of vanilla and 4 tablespoons of cubed butter and whisked to combine. I passed everything through a sieve to filter out any of the larger bits of cooked egg. That went into a plastic bag, which would then go into the fridge to chill.

Puff Pastry is pretty amazing. Taking the advice of one of my favorite TV chefs Alton Brown, I bought frozen Puff Pastry instead of trying to make it from scratch. Using those Mickey sandwich cutters from above, I followed the instruction on the packaging to thaw the puff pastry dough, then pre-cut a few Mickey shapes and baked at 400F.

About 12 minutes later these beautifully puffy pastries were the result!

Should I go the easy route or the harder route for the stencil? I had toyed with the idea of making a simple tri-circle Mickey head, but decided to go for the more difficult path. With a hobby knife, I cut out my stencil and hoped for the best.

After splitting the puff pastries and filling them with strawberries and vanilla cream, I called the kids into the kitchen to help again. 

Alright kids, I’ve got a super important job for you! These need powdered sugar and a Mickey design.

Alli took care of sprinkling the powdered sugar on top.

I’ve got the kids helping me measure out ingredients for my candied sugar. 

For our ingredients we just need

    • 1 cup of sugar
    • 1/2 cup of water
    • 1/4 cup of corn syrup
    • Candy thermometer, that’s super important.

After washing and drying my strawberries, a grapefruit spoon made quick work of taking off the tops and not taking away too much of the berry.

I shooed the kids out of the kitchen for the next part because I figured it would be best not to have them around boiling sugar. Add all 3 ingredients to a saucepan and stir together. Brush any sugar grains from the walls of the pan into the liquid below. Bring to a boil and do not stir again.

Once it hit 300F, the hard crack stage of sugar, I knew that when it cooled it would be a crunchy sugar candy.

Theresa helped me out as I ladled the boiling sugar on top of the strawberry skewers.

This stuff cools really fast! By the time I started sprinkling sesame seeds on top, many of them had already hardened! That’s why some of these are extra thick because it’s double-coated so I could have another try to get the seeds to stick. 

Not bad, not bad. Looks pretty close to me! The sugar glaze set up great around these strawberries. They’re going to be tasty and crunchy!

Disneyland Resort – Dole Pineapple Strawberry Float with Vanilla Ice Cream and Strawberry Popping Pearls

For this next recipe and a few others that follow, I need a strawberry syrup. 

For ingredients we’ll need:

    • 2 cups of strawberries
    • 1/2 cup of sugar
    • 1 cup of water
    • 1 Tbsp of corn starch + 2 Tbsp cool water 

Alli helped me measure the strawberries, sugar, and water into a saucepan. We brought it to a boil and then simmered for 10 minutes. Mix the 1 Tbsp corn starch and 2 Tbsp cool water in a separate bowl.

After 10 minutes I added the extra water and corn starch to thicken things up. Then to make it extra smooth, I blended the whole thing in the Vitamix blender and passed it through a sieve.

For the rest of our ingredients we’ve got to use Dole Pineapple Juice. I knew I could buy Strawberry Popping Pearls in bulk, but I don’t need that many. Theresa found me this awesome alternative with these Bubble Fruit cups, found in the apple sauce section of my local Target.

I separated the strawberry popping pearls from the peaches. Grr, I wish they were red. Oh well.

Those clear pearls are hard to see, but they’re in there. I added a good bit of our strawberry syrup to the pineapple juice, along with a couple good scoops of vanilla ice cream. 

This Strawberry drink was one of our favorites at the DCA Food and Wine festival, and our homemade version was also delicious!

Disneyland Paris Resort – Strawberry and Orange drink from Bistro Chez Remy

Wait, wait, wait. I’m in Paris and I’m not making a Strawberry Crêpe? So the truth is, I don’t know if you can get a strawberry crêpe in Disneyland Paris. I did see crêpes, but the choices were either Nutella or Plain Sugar. Maybe if we would have gone to more sit-down restaurants.

The crêpes in the picture below are from Tokyo Disneyland, and I’ve already got something planned for that. So, I’m going to have to think of something different for Disneyland Paris.

There were two choices I had. Either a Strawberry Cheesecake Ice Cream that none of us really liked, or this Strawberry and Orange drink that we were served at Bistro Chez Remy! This wasn’t even something we ordered! Based on the amount of time we were visiting Disneyland Paris, it made sense for 1 of us to buy an Annual Pass. One of the benefits is a free non-alcoholic drink at many table-service restaurants. When we showed our server the AP, he brought these drinks out to everyone before the meal. 

After adding a straw, I took a sip of the bottom layer and it was a ridiculously sweet strawberry syrup. Tasting the orange layer on top afterwards it was almost bitter in comparison. Mixing the two together resulted in a delicious strawberry and orange drink that everyone at the table loved.

To make ours, I poured our strawberry syrup that we made earlier into the cup and then poured some orange juice on top. Super simple. 

I swear I bought an orange just so I could put a slice on the side of the glass, but forgot. Doh. Still looks good though. And tastes good too.

Tokyo Disney Resort – Strawberry Waffle

Waffles are a delicious breakfast option, made even better when you have a Mickey waffle iron. I was fortunate enough to be gifted one by a co-worker who knows how much I love Disney. 

Using a waffle mix, Theresa made a Mickey Waffle. Easy peasy.

She did make whipped cream from scratch to go on top, along with some macerated strawberries. For the drizzle, Theresa used the vanilla cream from the Napoleons and strawberry syrup we made earlier. Theresa did a great job on the presentation making it look a whole lot like the real thing! In the end it tasted even better than it looked! Everyone enjoyed the strawberry waffle.

Well it has been hours of time in the kitchen getting all this together, but seriously, this is how family memories are made. I’m remembering the fun times we had in all the parks and now this will be a new entry into those memories of how we made Strawberry Treats from every single Disney Resort in the world!

The frozen pops are first up. I didn’t opt for dry ice, so these are only as cold as my freezer will go. They’ll last for a few minutes, but not much longer than that. Kids and parents alike loved these homemade strawberry sorbet pops. The lemon gives it a tartness that goes really well with the strawberry flavor.

The candied strawberries are a little difficult to eat, especially with little mouths. That outer candy shell shatters into hard pieces, but is good with that strawberry underneath.

Fresh Strawberries can be a delicious treat too, without anything extra added to them at all. Our family had a fun character breakfast with Minnie, Mickey, Pluto, and Auntie, and part of that buffet breakfast included fresh strawberries. Along with all our foods above, we enjoyed fresh strawberries too.
