While I’ve been at home and away from my beloved Disneyland, I have been experimenting with recreating all sorts of goodies from the parks. My latest venture has been making one of my daughter’s favorite treats from Disney California Adventure’s Pixar Pier… Jack-Jack Cookie Num Nums! Let’s get started, shall we?
How to Make Jack-Jack’s Cookie Num Nums
This recipe was shared on Pixar’s Instagram account back in March, but I didn’t have the time to try making them until recently. They’re so simple to make that even a (super-powered) baby could do it!
To start off, you’ll need to gather your ingredients and prep your work station.
The base of this recipe and the secret to its rich taste comes from browning the butter. It adds a deep and complex nutty flavor to the cookies that’ll have you wondering when you became a professional baker. Don’t know how to brown butter? It’s easy! Just put a stick of butter in a big fry pan and melt on low heat. You want to keep an eye on it as it slowly turns brown and make sure it doesn’t burn and turn into black butter!
Next, you cream the butter, white and brown sugar, and salt together until it becomes a wonderfully fluffy and light brown. Be sure to take your time on this step because it’s important for the texture of the finished product. It will take about five minutes to get the butter and sugar creamed to the right color and texture.
According to Pixar’s instructions, you scoop the dough into balls and chill the balls before baking. This is all well and good because a cookie is a cookie, no matter its shape, but it won’t give you the iconic look of the Cookie Num Nums you can get in front of the Incredicoaster.
So, in order to stay true to my plan of recreating the DCA treat, I deviated a little bit. I scooped the dough into parchment liners (muffin top/pastry liners are perfect for this!) using a giant cookie scoop. After scooping, you press the dough into the liner and add some additional chocolate chunks to make them all pretty. Doing it this way made about 20 cookies for me, but you’d make more if you don’t use a giant scoop!
And be sure to take your time with the chilling, that’s how you get that soft, gooey texture after baking. I chilled my cookies in their liners for a full 8 hours to resolidify the fat and make sure it baked evenly for a delicious treat.
The recipe calls to bake the cookies at 350° F for 7-10 min but it was more like 11-13 min (that was probably because I made them so big!). Bake them until they are slightly brown and soft in the middle.
Once they’re the perfect color, take them out and let them sit for a few minutes before digging in. This is the hardest part by far, being so close to delicious gooey goodness and not having any!
I’m a pretty picky baker, and I’ve got to say I was very pleased with how these came out. They tasted exactly like the ones you can get on Pixar Pier. I didn’t end up baking all the cookies at once, and I froze the remaining discs so I could make a delectable Disney snack whenever I feel like I’m missing the parks.
Extra tips!
If the mixture is a bit dry and crumbly, add the rest of the egg whites from the separated egg yolk. That should help your dough stick together. I also highly suggest using a muffin top liner to put the dough in to chill in the fridge. To bake the frozen cookies, set your oven to 350 and bake for 10-12 minutes. Enjoy!
