A tale as old as time is getting just a little older: Disney’s  Beauty and the Beast is turning 30 this year! It’s hard to believe, but on November 22, 1991, the now-classic animated film was released in theaters. To commemorate the film’s anniversary, I’ll be sharing Walt Disney World’s recipe for the famous Gaston’s Giant Cinnamon Rolls that are sure to satisfy even the grumpiest of Beasts!

Beauty and the Beast Turns 30

As a lover of pretty much all things Disney, it shouldn’t come as a surprise that Beauty and the Beast is one of my favorite movies. I remember going to my local movie theater (that only showed one movie at a time) twice by myself to watch this enchanting movie. Over the years, I have seen it in many places and in various formats. I watched it at the iconic El Capitan Theatre in Hollywood with producer Don Hahn and Disney animator Andres Dejas giving guests behind-the-scenes info about the movie.

And I have also seen the Broadway musical several times. I still don’t know how the Beast transforms before our eyes on the stage, and I don’t want to know! I love all the songs and stage magic that goes into this show. Our neighbor was friends with Belle’s dresser at the Shubert Theater in Los Angeles in 1996 and we were lucky enough to have a private tour backstage and we got to see the wigs, costumes and even got to go on stage after the show. What a thrill!

My daughter and I attended Beauty and the Beast in Concert at the Hollywood Bowl in May 2018 and it was so touching to experience that. It brought back all the memories of enchantment from watching it the first time.

In the movie, there is a faded sign that gives a nod to the names of various cities important to Disney, including Burbank (where the Disney Studio is located), Anaheim (home of Disneyland), and Valencia (the city where California Institute of the Arts is located and where many Disney animators trained— and also my hometown!). I was lucky enough to grow up down the street from Cal Arts and attended many student presentations there.

Now that we’ve taken a trip down memory lane, let’s get to the real meat bread of the article: Gaston’s Giant Cinnamon Rolls. You can find these massive swirls of delight at Gaston’s Tavern in Walt Disney World’s Magic Kingdom. Whenever my family visits Magic Kingdom, my kids always have to get a cinnamon roll from there.

I love all the attention to detail in the decor of the tavern. It’s really like being part of the movie.

Though, I do find it funny picturing Gaston (as troublesome as he is) fussing over a batch of massive cinnamon rolls— after all, those cinnamon rolls are named after him!

Gaston’s Tavern isn’t the only Beauty and the Beast-themed eatery in the park either. If you can, you should definitely check out the Be Our Guest Restaurant. With the Beast’s Castle located on the exterior, it certainly makes for a grand entrance. There are three dining rooms to take in, each meticulously detailed: The Grand Ballroom, The West Wing, and The Castle Gallery. Our favorite room is the West Wing, but each of them are truly unique!

Gaston’s Giant Cinnamon Rolls

To help us celebrate Beauty and the Beast turning 30, let’s make some of Gaston’s Giant Cinnamon Rolls. Luckily, it doesn’t need 5 dozen eggs to make!

Gaston’s Cinnamon Rolls – Makes 12 rolls

FOR THE DOUGH

  • ½ cup salted butter, melted
  • 1 ½ cups whole milk
  • 6 ½ to 7 1/2 cups all-purpose flour
  • 2 packets active dry yeast 1/4 ounce packets or 4 ½ t.
  • ½ cup granulated sugar
  • 1 tsp salt
  • ½ cup water room temperature
  • 2 large eggs

FOR THE FILLING

  • 2 cups light brown sugar
  • 2tbsp cinnamon (my favorite is Ceylon)
  • 1 cup salted butter, softened
  • ½ cup salted butter, melted

FOR THE CREAM CHEESE FROSTING

  • 8 ounces cream cheese at room temperature
  • ½ cup salted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 3 tbsp heavy cream
  • 1/8 tsp salt

FOR BUTTERSCOTCH TOPPING

  • ½ cup light brown sugar
  • 4 tbsp salted butter, softened
  • ½ cup heavy cream
  • ¼ tsp salt
  • 1 tsp vanilla extract

INSTRUCTIONS

FOR THE DOUGH

  • Grease an 18″ x 13″ baking pan (1/2 sheet) with nonstick cooking spray and set aside.
  • In a medium bowl, combine 1/2 cup of butter with milk.
  • In the bowl of a stand mixer, add 2 1/2 cups of flour, yeast, sugar and salt. Add water, eggs and butter mixture. Using the flat beater attachment, mix until well combined. Add the remaining flour 1/2 cup at a time while mixing until the dough starts to form a ball. If the dough is extra sticy, you can add up to a cup of extra flour. It should be tacky.
  • Switch to the dough hook attachment and knead dough on low speed for 5 minutes.
  • Remove dough from the bowl, sprinkle some flour in the bowl and return the dough to the bowl. Let the dough rise for 10 minutes in a warm place.

FOR THE FILLING

  • In a medium bowl, mix brown sugar, cinnamon, and softened butter together. Set aside.
  • Roll out the dough to form a long rectangle, about 3′ x 2′. Spread the filling across the whole surface of the dough.
  • I cut the rolls in about 2 1/2-3” slices using a serrated knife in a sawing action so you don’t squish the dough. It makes about 12 rolls.
  • Place the rolls swirled edge down on the prepared pan.
  • Drizzle the rolls with melted butter. Allow to rise at room temperature for about 30 minutes.
  • Preheat oven to 375. Bake rolls for 20-25 minutes until golden.

FOR THE CREAM CHEESE FROSTING

  • In a medium saucepan over medium heat, add cream cheese and butter. Combine and heat until melted, about 3 minutes.
  • Remove from heat and stir in the confectioner’s sugar. Add vanilla, cream and salt. Stir, then set aside.

FOR THE BUTTERSCOTCH TOPPING

  • In a separate medium saucepan over medium heat, add brown sugar, butter and cream. Bring to a boil and boil 5 minutes, stirring frequently. Remove from heat. Add salt and vanilla. Set aside.

TO SERVE:

  • Place each giant roll on a large plate. I spread the cream cheese frosting over the swirl until the top is coated. Then drizzle the butterscotch topping over the swirl.
